I'm at it again, but this time I will bring you breakfast. We all know how crazy Christmas morning can be. I know when I was a kid, we'd wake up hours before sunrise. We will be so excited and ends up that it would be hard to go back to sleep. The rule is that we can not wake up our parents early, so we'll look forward to our parents so that we can start unwrapping gifts.

At the time my parents come down, we'll be on the outside can't wait and want to start with a direct gift. There were 5 children in our family, and we take turns opening presents, one at a time, so needless to say, this is not a quick process. By the time we finished, the majority of the morning will be lost.

MATERIALS

  • 1/4 cup butter, melted
  • 1 cup light brown sugar
  • 1 cup fresh cranberries, divided
  • 1 (1 lb) loaf white bread, cut into cubes 1 inch
  • 2 cups milk
  • 6 eggs, lightly beaten
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon orange extract, optional
  • powdered sugar, to serve

INSTRUCTIONS

  1. Pour melted butter evenly into the bottom of a 9 × 13 inch baking dish. Sprinkle sugar evenly over the top. Sprinkle 1/2 cup cranberries over the brown sugar. Add the diced bread to baking sheet. Sprinkle the remaining cranberries on top.
  2. In a large bowl, combine the milk, eggs, vanilla extract, orange peel, cinnamon and orange extract (if using), and shake lightly to combine. Pour the mixture evenly over the bread in the baking dish. Press bread down into the liquid mixture if needed to make sure all the bread soggy. Cover the dish with foil and chill overnight, at least 8 hours.
  3. Bring a dish from the refrigerator 30 minutes before baking. Preheat the oven to 375 degrees f. Bake the casserole, still covered, for 30 minutes. Remove the foil, and continue baking until brown and tester inserted into Center comes out clean, another 15-20 minutes.
  4. Let the stew sit for 10 minutes before serving. Serve topped with powdered sugar.
