This is my version of the Pork Tonkatsu Japan. Crispy breaded pork with sweet and tangy sauce that is delicious. A very tasty dish is slightly different (but in a very good way!) ready in under 30 minutes.
I don't think I even knew existed until the panko bread crumbs about 5 years ago.
Currently we're lining pork steak in wonderful crispiness panko.
Tonkatsu sauce for Pork is strong, sharp and sweet, but delicious. Feel it directly from the pot and you may pucker your lips a little and thought it would be too strong. However, after it had drizzled in pork it feels great. A whole lot of polished minutes by me, Chris and the kids (even drizzled raw cabbage sauce are consumed without arguments!).
I got the recipe from the good old Hairy Bikers (love those-they are where I got the recipe from a Cornish Pasty of me too). I made some minor changes (use wine instead of the dry sake, ginger instead of fresh, skip the mustard powder, add a little curry powder and finish the pork from the oven) but everything else is pretty much the same.

Materials
Pig:
- 2 eggs, lightly whisked
- 4 tbsp flour
- 1/4 tsp salt
- 1/4 TSP ground black pepper
- 75 g panko bread crumbs
- Steak of pork loin 4-excess fat removed
- vegetable oil for frying
- Tonkatsu sauce:
- 120 g Tomatoes tomato sauce
- 75 ml white wine
- 2 tbsp Worcestershire sauce
- 2 tablespoons dark soy sauce
- 1 clove garlic, peeled and chopped
- 1/4 TSP dried ginger
- 1 tsp curry powder
- 1 tbsp mirin
- 1 tbsp sugar
Serve:
- Rice
- 1⁄2 white cabbage shredded finely
- 3 spring onions scallions, chopped
Instructions
- Place eggs in a shallow Bowl, the flour, salt and pepper in bowl of both (mixed together) and bread crumbs panko in a third Bowl. The coat is one of the pork steak in flour, then dip in egg and finally coat in bread crumbs. Place on a plate and repeat with the other pork steak.
- Preheat the oven to 200 c/400f.
- Heat the oil in a large frying pan and fry the pork steak on medium heat to 2-4 minutes on each side until golden brown. Then place on a baking tray and finish in the oven for 7-10 minutes until pork is no longer pink in the middle.
- While fried pork, tonkatsu sauce place all the ingredients in a small saucepan, mix and bring to a boil. Reduce heat and simmer for 5 minutes, then turn off the heat (sauce is good served warm but not hot).
- When the steak is ready, take the pork from the oven and cut into strips. Place in the top four bowls of rice. Serve with raw cabbage slices, drizzle with sauce and tonkatsu. Sprinkle chopped onions on top and serve with the remaining sauce tonkatsu.
