Salsa Macha

Ingredients:

  • 3 garlic cloves
  • 15 morita chilies seeds removed
  • 2 tbsp vinegar
  • 1/2 tbsp of sesame seeds
  • 1 1/3 cup of olive oil
  • salt to taste
  • 5 arbol chilies seeds removed

Instructions:

  1. Warmness a pot over medium heat and toast the sesame seeds.
  2. Switch the seeds to a blender.
  3. Add the oil to the pot.
  4. While oil is warm add the morita chilies and fry till the chilies begin to sing his own praises. This need to take much less than 30 seconds.
  5. Transfer chilies to blender. Then fry the arbol chilies for a few seconds till barely darkened in colour. Then switch to blender.
  6. Fry the garlic cloves until they turn a golden colour and transfer to blender.
