Tuscan Sausage and Vegetable Stew is full of healthy greens and beans simmered in a comforting, well-pro broth. Diced kielbasa provides a hint of savory decadence.


We just had the maximum fantastic fall weekend maybe…ever? INGREDIENTS

  • 2 medium-sized carrots, chopped small

  • 13.5oz kielbasa, quartered then chopped
  • 2 stalks celery, chopped small
  • 2 packed cups baby spinach, roughly chopped
  • freshly grated parmesan cheese, for topping
  • parmesan cheese rind (optional)
  • 2 cups diced peeled Russet potatoes (~1 medium-sized potato)
  • 15oz can petite diced tomatoes, undrained
  • 15oz can great northern OR garbanzo beans, drained and rinsed
  • 4 cups chicken broth or stock

DIRECTIONS:

  1. Heat oil in a massive soup pot or Dutch Oven over warmth that’s only a touch above medium. upload kielbasa, celery, carrots, shallot, and garlic then season with seasoned salt and pepper and stir to coat. location a lid on top then prepare dinner for 7 minutes, stirring a couple times. do away with lid then maintain to saute until veggies have softened, five-6 more mins.
  2. Add Italian seasoning, undrained tomatoes, beans, chook broth and parmesan cheese rind if using, then flip heat as much as high to carry stew to a boil. flip warmth backpedal to medium then add potatoes, partially cover with the lid, and simmer until potatoes are soft, 20-25 minutes, stirring from time to time. add baby spinach then prepare dinner till wilted, 1 minute. Scoop stew into bowls then pinnacle with parmesan cheese and serve.

Notes

  1. I like adding leftover parmesan cheese rinds into stews and soups - it adds the quality savory flavor!
  2. I sometimes add cooked small-shaped pasta to this stew for my kids - mini shells, elbows, alphabet
