Ingredients

  • 2 tablespoons finely chopped red onion
  • 4 poppyseed bagels, divided
  • 1 can chickpeas, rinsed and drained
  • 2 avocados, pitted, and chopped
  • 1/3 cup chopped cilantro
  • microgreens, for topping
  • Juice of 1 lime
  • Salt and black pepper, to taste
  • sliced tomatoes, for topping
  • 1 tablespoon olive oil
Instructions

  1. Rinse and drain the chickpeas. add to a medium bowl together with the avocado. using a fork or potato masher to break the avocado and chickpeas together. add in cilantro, onions, and lime juice. Season with salt and pepper, to taste.
  2. Spread salad on bagels and top along with your preferred sandwich toppings, i really like microgreens and sliced tomatoes!
